The most famous example of Turkish dondurma is Maras Dondurmasi, which is very chewy and made with goat milk and has some ground orchid root (salep) in it. That's why all those guys ice cream parlors use long sticks to stir and serve the ice cream. It's pretty dense. Here is a good article on Maras Dondurmasi. Apparently, guar gum can be used instead of salep, because it's hard to find outside of Turkey.
